Christmas time is right around the corner... LITERALLY! We have 5 more days until Christmas Day. Which means, ham, desserts, pies, salads, desserts, treats, desserts-do we see a theme a here!? I have decided to share some of my favorite foods for you and yours to share this Christmas!
 
1. Chocolate Covered Potatoe Chips
   One word- YUM.  
Super easy recipe: Melt chocolate chips in the microwave. Dip chip in melted chocolate. Lay on parchment paper. Repeat.
    Salty meets sweet! I will be posting pictures later this week of me and my son making these yummies! = ) We will be wrapping these to give to family so I will also show you the final production !
 
2. Homemade Vanilla Ice Cream
   What is pie without a side of ice cream? And even better-homemade!
   This recipe is from Better Homes and Garden and is delicious!!!!
 
  You will need:
   -4 eggs
   -2 1/4 C sugar
   -5 C milk
   -4 C sweetened condensed milk
   -4 1/2 tsp. vanilla
   -1/2 tsp sald
 
  Beat eggs until creamy. Gradually add sugar. Beat until very thick and stiff. Add remaining ingredients and mix thoroughly. Pour into gallon freezer contrainer and freeze.
 
3. A Must Have~ Creamy Artichoke and Spinach Dip
  Okay, who doesnt like tortilla chips and dip?! Super easy recipe from Food Network.
 
   8 C. Fresh Spinach
   1 clove garlic, minced
   1 lemon, zest finely grated
   2 (14 oz) cans artichoke hearts, drained and coarsely chopped
   6 oz  (1 1/2 cups) Parmesan, freshly grated, divided
   3/4 cup sour cream
   3/4 cup mayo
   1 T. bottled cayenne pepper sauce
  
  Heat oven to 375 degrees. Spray 1 1/2 quart casserole dish with cooking spray-set aside.
 
  Blanch spinach. Squeeze excess water.
 
 In medium bowl: mix spinach, garlic, and lemon zest. Add artichoke hearts, 1 cup parmesan, sour cream, mayo, and cayenne pepper sauce. Mix. Place into casserole dish. Bake 30 minutes. The last 5 minutes, add the remaining parmesan cheesse to the top.
 
 ENJOY!!! =)
